Savory Autumn Quiche with Pumpkin and Goat Cheese

Autumn is the season of comfort food. Warm flavors, rich aromas, and colorful seasonal vegetables like pumpkin make this the perfect time for a savory quiche. This quiche combines the gentle sweetness of pumpkin with creamy goat cheese and fresh spinach. Ideal as a main dish for a weekday dinner, but also surprising enough to serve at a dinner with friends or family.

With the help of your blender and air fryer, this dish is quick and easy to prepare.

Ingredients (4 servings)

  • 1 roll fresh puff pastry
  • 300 g pumpkin (diced)
  • 1 red onion (chopped)
  • 2 cloves of garlic
  • 3 eggs (cooked in an egg cooker)
  • 150 ml cooking cream
  • 100 g soft goat cheese
  • 2 handfuls fresh spinach
  • 1 tbsp olive oil
  • 1 tsp thyme
  • Salt and pepper to taste

Preparation

1. Prepare the pumpkin

  • Peel the pumpkin and cut into small cubes of about 2 cm.
  • Bring a pot of water to the boil and cook the cubes for 8–10 minutes, until soft but not falling apart. Drain and let cool slightly.

2. Sauté onion and garlic

  • Heat olive oil in a frying pan.
  • Sauté the chopped onion and garlic over medium heat until translucent and lightly golden. This adds extra depth to the filling.

3. Make the filling

  • Place the pumpkin, sautéed onion and garlic, cooked eggs, and cream into the blender.
  • Blend until smooth. Season with thyme, salt, and pepper.
  • Prefer a chunkier texture? Blend less so small pumpkin pieces remain visible.

4. Assemble the quiche

  • Line a quiche tin, baking dish, or air fryer-safe pan with puff pastry. Make sure the bottom and sides are well covered.
  • Prick a few holes in the base with a fork so the pastry doesn’t rise too much.
  • Spread the fresh spinach on the base. Pour the pumpkin mixture over it.
  • Crumble the goat cheese on top and spread evenly.

5. Bake

  • Preheat the air fryer to 180°C.
  • Carefully place the dish inside and bake the quiche for 25–30 minutes. The top should be golden brown and firm.
  • Using a regular oven? Bake for 35–40 minutes at 180°C.

6. Serve

  • Let the quiche rest for 5 minutes before cutting. This keeps the filling firm.
  • Serve warm, optionally with a fresh salad or a bowl of soup for a complete autumn menu.

Tip: Make a more luxurious version by adding walnuts or pieces of feta.
